(B) When salt is added to vegetables,the concentration of the surrounding medium becomes hypertonic compared to the cytoplasm of the vegetable cells.Due to this concentration gradient,water moves out of the vegetable cells into the surrounding medium through the cell membrane.This process of movement of water from a region of higher water potential (inside the cell) to a region of lower water potential (outside the cell) through a semi-permeable membrane is known as $Exosmosis$.
